Brisket is our favorite! We cook 2 or 3 at a time in the crockpot. The leftovers we use for beef stew!

I've never purchased Double Check beef, but when I have the opportunity, I will probably buy ground beef and soup bones. We eat a lot of ground beef, making burgers and meatballs and tacos (and, and!). Also I make my own stock, so soup bones would be awesome. :)

I've never had beef from this ranch - would love to try it out. We like to cook rib eye steaks, so tasty, the best of all the cut of steaks! It's one of our favorite meats to serve a quick meal with roasted veggies and fried golden yukon potatoes when company comes. . .

I love a nice filet, generously rubbed with coarse salt and fresh ground pepper, lightly dusted with flour, and done just a few minutes on each side, with garlic infused olive oil AND butter. Finish it with a nice reduction of Ruby Port and a dry white wine, with just a dash of balsamic vinegar, and all it needs is a nice bed of undressed greens-- no heavy sides required.

We purchased the mini-pak and the selection is awesome and goes a long way for a family of 4. If you've never had liver from a grass-fed animal then try this... it's the prize in the mini-pak!
Liver, sauteed onion and pancetta with balsamic glaze (serves 2)
saute 1/2 sweet onion (sliced in 1/4" rings) in 2 Tbl spoons butter and 2 tbl spoons olive oil, add 1/4 cup diced pancetta and 1 clove minced garlic, cook until pancetta is slightly crisp (remove pancetta and onion and reserve) place liver in the pan and add pinch of salt and fresh black pepper, turn over after a few minutes and add onion and pancetta back in the pan, after liver is medium rare add 1/4 cup balamic vinegar and let reduce until liver is medium. Buon' appetito

It's all about the ribeye when it comes to steaks but I love a good pot roast - must be the Midwestern upbringing.

I have never had this beef. It sounds great. I would first love to have some chuck roast with bone, to make a very tasty family favorite Portuguese dish called Alcatra, cooked in terra cotta pots. The smell is incredible, as well as the taste! It tastes even better the next day...

In the interest of supporting local, sustainable, and organic, I recently tried your ground beef, and I now refuse to purchase meat from anywhere else! Tacos, casseroles, hamburgers, you name it...all of them are delicious with the ground beef from your cows. My husband is particularly fond of the filets, cooked medium rare, with just a hint of adobo seasoning, pepper, and salt. I would love the opportunity to visit your ranch and see the whole operation!

Ok, so I've never bought beef from Double Check before, but this seems like a great opportunity to check it out. I would definitely cook up some short ribs in the crock pot jerk style. I'd throw some sliced sweet onions and sweet potatoes and smother it all with beef stock, apple cider vinegar, ginger, garlic, coriander, thyme, cinnamon, nutmeg, and allspice. Just let that sit in crock pot all day with the aromas permeating throughout the whole house.

I'd also make some ground beef and liver meatballs to go with my homemade chunky tomato sauce.

And of course, I'd need a lot of shanks to make beef broth which I drink almost daily.

Oh, and the chuck steaks are great for making maple sage beef jerky or any other flavor for that matter.

Sigh....I could go on and on...

Good luck to everyone!
Peace
David

Short ribs are my absolute favorite!! Braise for several hours until tender, then whip up some braised short rib enchiladas! Nothing hits the spot quite like that, especially when it's Double Check beef!

Oh I always love the ribeye. I have enjoyed every cut that I've had so far from your ranch. I will be buying the cow pool next. Looking forward to it.

As for my ribeye fresh cracked pepper and Himalayan sea salt. That's it.

we love a nice steak! I prefer a ny strip with just a little salt, pepper, and little pink i the middle. My hubby loves the sirlon or rib-eye with salt, pepper, and a pad of butter. Although we have not been blessed enough to purchase from Double Check yet, we are saving up to do so. We moved from MI not too long ago where we were able to get grass fed beef from a friend's church. We miss it a ton!

Beef heart (it's not just for dogs!). Trim it and slice to stew size bits. Into the slowcooker throw meat, 1-2 whole heads of garlic (sliced or minced), 2-3 (even 4) tbsp of ground black pepper, salt to taste, and a couple bottles of your favorite red wine or darkish beer. Leave for as long as you can stand it (8-48 hrs) then eat with starch of choice (makes for a bracing breakfast on cold mornings).

Double Check I first off have to start by telling you that what you do and your ranch saved my sanity in a way. I was recently introduced to the horrible disgusting in which factory farmed animals are treated, slaughtered and processed. I no longer have anything to do with store bought, fast food, processed meats. With that being said I almost became vegan because I didn't see any other option until I came across AWA Certified and your ranch. My husband is very happy I'm not vegan and we weekly have a BBQ inviting friends to enjoy what I call happy, healthy meat and you can taste the difference :-) Thank you, thank you and thank you.

My favorite cut would have to be Sirloin Steak BBQ'd med rare with a black pepper rub, garlic and garlic salt. My husband on the other hand can't get enough of the ground beef he and I absolutely love it on the grill infused with pepper, salt, fine chopped onion & garlic.

Thank you again for your wonderful ranch raising animals how they should be raised and keeping us and them healthy. You are the key reason we started shopping at the Gilbert farmers market. We now live a much healthier life :-)

We have not tried Double Check Ranch "YET" will do so soon. We like ALL cuts of beef. We raised cows in Southern New Mexico, we understand what is behind keeping animals healthy physically and mentally. Go Grass Fed. When you personally raise and humanely eviscerate an animal is when you can fully appreciate the quality and workmanship that Double Check Ranch does for all beef eaters. Thank you Double Check Ranch.

Well this is a tough one! I love the beef from Double Check Ranch. If I had to pick one, I think I'll pick the versatility of the chuck. Whether it be chili colorado, beef bourguignon, beef on weck or machaca beef, I love the fact that I can support a quality, local, healthy product and love it!

I adore your filet...really I adore all of your pasture raised meats. I love supporting local argiculture, becuase you know your meat was humanely rasied and is natural and the best you can get. I love seasoning mine with salt and pepper, dizzling it with a bit of olice oil and cooking for about 5 minutes in a hot pan...searing it was a nice crust....then adding some brandy and flambing!!! Top it off with some herbed flavored butter that I pick up at St. Philip's farmers market if I do not have time to make some on my own....it is divine!!!!

Wow, I love so many. We got a roast at PHX market in November. I put in a crockpot low temp with a spice rub that I make myself. It was the most flavorful tender roast I have ever had. Yum!!!! But your bones are the best I have ever bought and make wonderful bone broth. I can get at least 4-6 good gelled batches out of one purchase.
