- By the Cut allows you to purchase smaller quantities and enjoy them on the same day you go to the farmers' market.

- By the Share offers a better price per pound, entails less waste per animal and allows you to know and appreciate a particular animal's flavor and texture.

Retail cuts are available for purchase at the Farmers' Markets, but are on an as-available basis. To be sure you'll get what you want, it's best to order a share.
