Just had to tell you! We had the shoulder roast last night for newly arrived guests from Florida. They are not real "foodies" like I am, so I was thrilled when they complimented the beef: "best roast we ever had." It was an "out of this world" taste sensation. I was telling Bobby how the two of you don't follow anyone else's expectations and that is SO refreshing! Congrats on the great things you're doing! Good Luck with your ranch. I am from class of 64, "Fighting Fourth" Squadron. I live in Las Vegas and Sedona. Building a camp there for chronically ill children (One of the Hold In the Wall Gang camps tha Paul Newman started years ago). Maybe we will be buying some of your beef for these unfortunate children. We feed about 300 people three times a day in the summer.

A friend has shown us that eating store bought meats is not the healthy way to go. So I am looking at web-sites for possible grass feed meat in Arizona. We live in Peoria Arizona but go to visit my Mom in Clifton Arizona a few times a year. Is it possible to visit your ranch and pick up meat at that time or do you exclusively sell at the farmers markets? Also, do you have prices we could look at? I notice there is a listing for pet foods. I feed my rat terriers (10 of them) a raw meat/bone diet and am always looking for sources. What is in the pet food you currently have? Is there any bone? Do you have the capability of grinding bone (as in the short ribs)?I have two other families here in Coolidge who also feed raw and we are currently purchasing through a small butcher in Surprise with a once a month delivery to a co-op location in Mesa.Since you are also located in Pinal County, I would be delighted to pick up right from the ranch or make some type of arrangement to get to the farmer's market in Oracle.

I think your message, your mission and your practices are so very right on. Thank you so much for your clear, articulate, informative letter in the Tucson Weekly (Jan.3-9 2008). I was absolutely disgusted by the assertions of our "regulating officials". I am sick to death of industry trying to ratchet up the profit by the continued over-processing of our foods. I suspect these heavy-handed policies of our local boards and departments are directly related to who writes campaign checks: big industry. Political absurdities aside, I would like to thank you for contributing to our communities' and our individual health. Farmers and ranchers who bring locally produced food to our tables are our best hope for a truly sustainable future. I know "sustainability" is now a trendy buzzword, but without good stewards of the land, we cannot sustain. Period.
